Alba – The Italian Way
JW Marriott, Bangalore / Bengaluru has an array of world class restaurants. Alba being one of them, is an Italian restaurant situated on the 1st floor of the hotel. We went there to learn Italian way of cooking from Chef Matteo’s #CafeMatteoMasterClass who came all the way from JW Marriott Juhu-Mumbai. Chef Matteo is known to use traditional methods and high quality ingredients in his cooking. The ambiance of Alba is phenomenal with large ceilings and theater styled seating.

The evening started with Café Matteo teaching us to make the ‘Smoked Eggplant and Pecorino ravioli in pecorino emulsion and tomato coulis’ dish which we later had for dinner. We also got to sample it and we could taste the organic and natural flavors of Italian ingredients. The use of smoked eggplant with the Pecorino cheese made the stuffing quite milder in taste. The Pecorino and tomato sauce were rich and gave the dish an ideal balance.
We had the Asparagi – an Asparagus dish where asparagus is used in three different ways. The Asparagus were cooked really well in each of its form and the salad was a delight to have. Next we tried the Baked Zucchini, Pesto and Provola Parmigiana and Burrata sauce dish. It was in lasagna form and the taste was gastronomical with layers of zucchini, cheese and eggplant. The evening ended with the Cassata with a tropical twist dish. Each of the icecreams in the Cassata were fresh along with the cake. For the tropical twist Mango was used, the sour mango with the sweet ice-cream gave a perfect balance to the dish.
The evening with Chef Matteo turned out to be gastronomical. No doubt Alba is one of the best Italian restaurants in the city with mesmerizing ambiance and amazing hospitality.
