The Great Buffet – Pavilion

On the occasion of 68th Republic Day of India, Comfort Inn recently launched ‘Namak’ – a common condiment connecting different people with different cuisines. The food festival was showcased at the Pavilion Restaurant. Comfort Inn Insys is located in Yestwantpur area of Bangalore and the property is home to some amazing restaurants like Chameleon and Cinders. The Pavilion Restaurant is a fine dining place with typical seating arrangements. The décor was themed around the Constitution of India and had large portraits of freedom fighters on the wall, to mark this historic event.

We went to Pavilion to try their buffet spread for the Namak festival. The starters included Hara Bhara Kebab and Paneer Minasu. The Hara Bhara Kebab was soft and succulent with chaat masala on top. All the flavors came together so well. The Paneer Minasu is a South Indian dish from Kerela and had super flavors. Amazing in taste and tasted like fried Idlies but with Paneer (much better, don’t you think?). The spread consisted of a wide variety of salads and soups. We tried the Pineapple Shorba, it was the first time I tried this dish and I fell in love with it. The grilled Pineapple gave it an earthy taste. There were a number of Chaats in the counters and we especially liked the Dahi Bhalla and the Papdi Chaat which you can make on your own.

The main course had around 8 gravies along with few Chinese and Italian items known as ‘Beyond the Border’. Some of the gravies we loved were Dum Aloo Kashmiri and Corn Palak among all. The Dum Aloo had smooth creamy texture and was a bit on the sweeter side. The Corn Palak was creamy too and melted in the mouth. Some of the other gravies were Veg Hyderabadi, Dal Makhani, Kadai Veg, Punjabi Kadi and Pindi Chole. You can try these gravies with Indian breads like Naam, Kulcha and Tandoori Roti. We also had the Veg Biryani which was good in taste, but was a bit mushy to my liking.

The spread of desserts was even more promising. We had the Semaiya Kheer, Rasgulla, Matka Kulfi, Tri color Cheesecake, cut fruits, Sweet Samosa, Rasgulla Cake and much more. We loved the Sewai Kheer as it had a refreshing taste of cardamom. The Sweet Samosa was similar to gujiya and the Rasgulla was breaking at the slightest touch. What I really liked about this buffet was the fact that it was holistic. We got to try almost everything on the spread and each one of them was delicious!

The buffet was worthwhile as Chef Abhijit took us for a tour of the kitchen where we got to see all the action. Thanks to Chef Abhijit for this amazing experience and the lovely spread. There is just magic in his hands. And thanks to all the staff and managers at Comfort Inn Insys for their warm hospitality.
